Lachha Paratha / Whole wheat Flakey Flat Bread

We all love to order this Lachha Paratha when we dine out. But have you ever given a thought ,of making it at home? I have always wondered and stayed back even from the thought of experimenting it at home thinking it will be a complicated process to get the flaky layers. Must tell you,I was proven wrong when I made an attempt to make it at home. First time I tried and Viola!! it was great.. nice flaky paratha with mild crispness here and there.
Thanks to Sanjeev Kapoor's show on the television which motivated me to try this at home.I am sure you will also to try this recipe and enjoy the restaurant flavor in the comfort of your home.
I served this lachha paratha with a mix vegetable kurma ,but you can serve it with a choice of your favorite curry / gravy.

Preparation Time : 10-15 mins
Cooking Time : 4- 5 mins per paratha
Serves : makes about 8-9 parathas


1 cup whole wheat flour
pinch of salt
water for kneading
Oil /ghee for cooking the parathas


  • Knead a soft dough using whole wheat flour,salt and water as needed.
  • Give a coating of oil over the dough and rest it for about 15-20 mins covering with a muslin cloth or cling film or an air tight container.
  • Pinch out lemon sized balls from the dough and keep it covered until you roll out.
  • Take one lemon sized ball,roll into a normal chapati/roti.
  • Grease the roti with some ghee/oil and dust it with about 2 tsp of dry wheat flour and spread well.
  • Start making pleats from one end of the roti and go on till the end.
  • Start coiling from one end of the pleated roti and complete coiling and press the end of the coil to seal it.
  • Dust a little dry flour  on the spiral ball and keep it covered until you begin rolling again.
  • Do the same for all the lemon sized balls and keep them covered.
  • Start rolling the coiled balls by applying very little pressure without the use of dry flour.
  • Keep it a little thick so that the layers are visible when the parathas are cooked.
  • Meanwhile,heat a griddle / tawa .
  • Place the rolled paratha on the hot tawa and cook until little brown spots appear and one side appears to be cooked.
  • Flip over and drizzle oil/ghee over and cook well.
  • Press a little along the circumference of the paratha,this helps the layers to get cooked and gets crisp.
  • Take it off the tawa and serve hot with any curry.
  • If you desire,smear some butter / ghee over the paratha while serving.
