Paruupu Usili (Tamil) is a lentil based preparation where the lentil is blended into a coarse paste and then stir fried until the lentil mixture gets cooked and separated to a grainy texture.To this is added boiled vegetables like french beans,clustered beans (kothavarangai or gavaar),flat beans(avarakkai/paapdi),snake gourd (padwal/podalangai),Vazhaipoo(banana flower).
A great combination to this would be piping hot Rasam or MoreKuzhambu/Majjige Huli with steamed rice.If you like,this can be an accompaniment to rotis/chappati as well.

3-4 dry red chillies (spicy variety)
1-2 green chillies

salt to taste

Ingredients
150 gms french beans or any above mentioned vegetable of your choice.1 cup channa dhall
1 tbsp of thoor dhall
1 tbsp moong dhall
3-4 dry red chillies (spicy variety)
1-2 green chillies
small piece of ginger
corriander leaves

Mustard seeds
few curry leaves
pinch of asafoetida
pinch of turmeric
salt to taste
Method
- Chop the beans and boil it with little salt and keep aside.
- Wash and soak all the lentils together for about 45 mins to 1 hour.Soak the red chillies along with the lentils.
- Drain the water completely from the lentils and grind it coarsely with ginger and green chillies without adding water.
- Finely chop the curry leaves and corriander leaves and add it to the coarse paste.Add salt accordingly.
- In a kadai/wok,heat oil and temper the mustard seeds.
- Add the coarse lentil paste,asafoetida,turmeric and saute well.
- Saute continuosly for about 5-7 minutes or until the lentil paste starts to disintegrate and form a grainy texture. (Refer image which reads STEP 3 )
- Keep on low flame and saute occassionally until the raw smell of the lentils is lost.
- Add the boiled vegetables to this lentil mixture and stir fry till well incorporated.
- Serve hot.
