Uthappam is a dosa like dish made using fermented batter. Unlike dosa,uthappam is a thick pan cake like preparation with various toppings such as onions,tomatoes,carrots,peas etc.

Ingredients
For the Batter
1 measure udad dal3 measures par boiled rice
1 tsp fenugreek seeds
Salt
Toppings
1 finely chopped onion
1 carrot grated
50 gms fresh peas / frozen peas.
Method
- Wash the rice and udad dall separately until the water is clear.
- Soak them separately for about 4-5 hours.Add the fenugreek seeds to the udad dal while soaking.
- Grind the udad dal separately by adding little water till the ground mixture looks soft and fluffy.
- Take this out in a vessel.
- Grind the rice till its finely ground into a paste.
- Mix the Rice and Udad dall mixture add salt and stir well using a ladle.
- Let the batter rest for fermentation.
Note : Once the batter is fermented you can store in the fridge and can make uthappams/dosas anytime you desire.
- Heat a tava / griddle.
- Take a ladleful of batter and spread it evenly on the tava like a pan cake.
- Sprinkle the chopped onions,carrots and peas on the uthappam.
- Drizzle oil around the uthappam and let it cook for about 2-3 mins.
- Turn the uthappam upside down and cook for another 2 minutes.
- Serve hot with coconut chutney and /or sambar.
