butterscotch essence : 1 tsp
instant coffee powder : 3 tsp mixed in warm water
Method
In a wide pan, heat about 1.5 tablespoon of ghee and roast the maida until you get a nice aroma. take care not to burn / change color of the maida. Roast on medium flame.
In another burner, add the sugar with 1/2 cup water and allow to boil and prepare syrup of 1 string consistency.
Turn off the stove ,add the coffee decoction and mix well.
Now immediately, add the roasted maida to the sugar syrup and mix it quickly such that there are no lumps and the sugar and maida get mixed well. Add the butterscotch essence and mix the entire mixture well by stirring continuosly until it forms a nice mass and leaves the side of the kadai on its own. The heat in the sugar syrup is enough to form the mass. No need to keep the stove on for this stage.
Pour the mixture on to a greased plate / mould and tap it well to release the air bubbles and evenly level it . Allow it to cool for sometime and then mark the shapes and cut it into cubes or diamonds as per your desire.
Hi,planning to try this, but dint get the butterscotch essence, will it taste good if I use vanilla or rose???
ReplyDeleteCoconpowder and vanilla go well . You can try plain coffee flavor or plain vanilla or plain rose .
