Javvarsi Semiya Payasam | Sago Vermicelli Pudding | साबुदाना खीर

Any celebration is incomplete without a sweet treat.. what best way to celebrate the good news of my blog being selected under the top 200 Indian Food blogs by Feedspot . I thank Mr Anuj Agarwal and his team for this wonderful appreciation and listing of my blog in this space.
I know , I am little late in making this post as I was on a short break and could not immediately share this news with all of you .


Without further ado,let me get to the recipe of this yummy sweet which is indeed a treat to the taste buds . Jawwarsi Semiya Paysam is a favorite of Vj as well as my dad, so it's made quite frequently at home and we all enjoy it warm .

Most people get scared to make Kheer / payasam using Sago because it tends to get gooey and soggy or at times just melts in the kheer.
Handling sago needs a little bit of care and once we get it right,then there is no more fear of handling sago /sabudana /jawwarsi.

 I have given some fail proof and fool proof tips which will help in getting the perfect Sago kheer.You may skip the use or vermicelli and make the kheer/payasam entirely with sabudana or jawwarsi as well.

Serves : 3-4

Jawwarsi payasam, sabakki payasa, sabakki paysa, sabudana kheer, how to get perfect sabudana kheer ? Jawwarsi payasam seyyvadhu eppdi ?  कैसे बनता है साबुदाना खीर?

Ingredients

1/2 litre milk - boiled
3 teaspoons sago / sabudana / jawwarsi
1 tablespoon of vermicelly / semia / sevvayyan (optional)
few strands of saffron
few cashewnuts
1 tablespoon ghee /clarified butter
3/4th - 1 cup sugar - or a little more as needed.
1 tsp cardamom powder

Method

  • Wash and soak the sago pearls for about 30 mins in water and drain . The sago pearls would have soaked the water and bloated up well.
  • In a pan, heat some 1/2 tablespoon ghee , roast the vermicelli and sago until the vermicelli turns crisp and golden brown and the sago pearls are coated well with ghee. If you are not using vermicelli, then roast only the sago pearls in ghee.
  • Now slowly add in the boiled milk and keep stirring and cook on low flame until the milk thickens . The sago turns glossy and gives a glass like appearance which is the indication that the sago is cooked well.
  • Add the sugar, saffron strands and further cook for a while till the sugar dissolves well and the milk gets a lovely color due to the presence of saffron.
  • Lastly,add the cardamom powder ,cashews roasted in ghee and turn off the stove.
  • Serve it warm or chilled as per your liking and enjoy the yummy dessert.

Tips:
  1. Soaking the sago in water and then roasting ensures that the sago pearls get cooked well and do not disintegrate in the kheer
  2. On adding milk and cooking the sago and vermicelli,they turn glossy and beautiful ,indicating that the sago are perfectly cooked.

Semia /Vermicelli Upma - Shavigge Uppit

Upma is one of the staple breakfast menus in most of the households.Its quick and easy to make at the same time , sumptuous and filling when you add vegetables to it.

Rava Upma,Sabudana Upma,Variations of Poha - Tamarind Poha,Aloo Poha,Vegetable poha ,Broken Rice Upma etc etc are some of the varieties of upma you can try.


Semia Upma is made using vermicelli. You can use any variety of vermicelli that you like . Now a days we get millet based vermicelli too which can be used . Today's recipe, I have used the traditional normal non roasted vermicelli. 

The tip to get perfect Semia upma is to roast the vermicelli to perfection and the proportion of water . For 1 cup vermicelli I always use 1.75 cups of water. This ratio gives me the perfect semiya upma.

This version of semia upma has tomatoes and peas ,while you can even make the vegetable version following the same procedure by adding extra veggies of your choice.

I use the non roasted vermicelli of MTR Brand  and do the roasting at the time of preparation.In case you use the roasted vermicelli,the steps remain the same except that you save time on roasting the semia.

These upma varieties can also be packed for lunch box for kids as well as adults.

Cooking Time : 20 mins
Serves : 2-3
Cooking Complexity : medium
Water ratio : 1 cup vermicelli : 13/4th cup water.



Ingredients

1.5 cups unroasted semia/vermicellii
2 medium sized tomatoes finely chopped
handful of frozen/fresh peas
2-3 green chillies chopped
6-7 curry leaves finely chopped
1/2 tsp mustard seeds
1 tsp udad dhall + channa dal
pinch of asafoetda/hing
pinch of turmeric
3 - 4 teaspoons oil
salt as needed

Method

  • In a frying pan ,add about 1/2 tsp oil and add roast the vermicelli until it turns golden
  • brown.Saute occassionally to prevent the burning of vermicelli.Keep aside.
    • If using pre roasted vermicelli,skip the above step
  • In a kadai/wok,heat some oil,splutter mustard,the udad dal,channa dal ,the green chillies and curry leaves.Saute once.
  • Add the tomatoes,green peas ,haldi,asafoetida,salt and saute and let the tomatoes cook until soft.
    •       Tip : Incase of adding vegetables,saute them also at this stage,add about half cup water  and let the vegetables cook.
  • Add about 21/2 cups of water and bring it to a boil
  • Add the roasted vermicelli and quickly stir it to avoid formation of lumps and set the flame to medium.
  • Close a lid and cook for about 5-7mins or until the water is absorbed into the vermicelli completely.
  • Open the lid and let it cook for another 2 mins.
  • Turn off the stove ,close the lid and let it rest for about 5mins . This will make the upma turn fluffy and the vermicelli will remain separate.  
  • Vermicelli upma is now ready to be served with any accomapniment of curd ,chutney ,pickle of your choice.

Notes

  1. You can a tablespoon of freshly grated coconut in the end for extra flavor and taste.
  2. Finely chopped mint can be added at the time of boiling water,this gives a minty flavor to the upma.
  3. You can serve it with some mixture or boondi for added crunch .

Semiya (Shaavige) Payasam / Sevayyan Kheer / Vermicelli Pudding

Semia Payasam (tamil) / Sevaiyan Kheer (Hindi) is a traditional sweet dish made using milk and vermicelli.Seasoned with ghee roasted cashewnuts and flavored with fresh saffron.

Semiya, Shaavige , Sevayyan refer to vermicelli and Payasam or kheer means pudding . 

Semiya Payasam is the first sweet which I learnt to make when I was trying my hands at cooking .
I always loved the Semiya payasam that amma would make and hence I was insistent that she taught me how to make it . Needless to say ,this shavige payasam (sevayyan kheer) is very close to my heart .

As simple as it may sound to make Semiya Payasam, we need to take care of a few things while making the payasam which will help you make the best kheer .Mom taught me these simple ,yet efficient tips and I can proudly say that Semiya Payasam never fails me and there is a huge fan following for the payasam I make . So here I am,sharing those tips and tricks with you all.

  • Always use the non roasted vermicelli that is available in the market to make Semiya Payasam.  When we roast the semiya in ghee ,make sure you donot over roast it . The vermicelli will appear translucent and you will feel light while roasting, this is the perfect texture of the semiya to make kheer .
  • Use pre boiled milk while making kheer as this will cut down the risk of milk curdling and also saves a lot of time waiting for the milk to Simmer along with the semiya .
  • Soak the saffron in warm milk and rub it with your fingers gently before you add it to the paysam . This will give you maximum flavor of saffron and a subtle yellow color to the payasam. 
  • You can dry roast a couple of almonds and pistachios to make a coarse powder and add it to the simmering payasam for added richness and taste.
  • Semiya payasam will turn a little thick on cooling down , so before serving you can dilute it by adding some warm milk .

This week (6th May 2023) we have achieved a milestone in our Foodies_Redoingoldposts Facebook group.  This is our 100th week and we are celebrating it by redoing one of our favorite sweet post . I chose to update the write up and photos of my favorite Vermicelli Kheer for this wonderful achievement. 



Preparation time : 5 mins
Cooking Time : 20 to 30mins
Serves: 3-4
Complexity: simple

Ingredients
1 /2 cup vermicelli
1/2 litre full fat or  2% fat milk  boiled 
4-5 cardamoms/elaichi powdered
Few cashew nuts
Roughly chopped almonds and pistachios
Few saffron strands / kesar soaked in warm milk
2 tbsp ghee
1/2 cup sugar + extra if you need more sweetness.

Method

  • Heat the ghee in a thick bottomed vessel.
  • First fry the cashewnuts in ghee until golden brown and keep aside.
  • In the same vessel,add the vermicelli and fry it in ghee until it turns crisp.
  • Now slowly add the milk and keep stirring the mixture.
  • The milk will slowly start boling and as you keep stirring will begin to get thicker and will turn light pinkish on simmering.
  • Donot let the milk to get very thick. 
  • Reduce the flame,add the sugar,cardamom powder,saffron and fried cashews to the kheer and simmer for 3-4 mins till the sugar dissolves well into the kheer. The paysam will appear a little diluted after adding sugar , but contine to simmer for 4-5 mins and then the consistency will be perfect.
  •  Add chopped badams and pista to the kheer
  • Serve hot or cold.
  • Incase the kheer/payasam feels too thick,you can add some warm boiled milk and dilute it.
